Browned Butter Miso Toffee Chocolate Chip Cookies


If you're looking for a chocolate chip cookie recipe but with a twist, this is it! and here are all the ingredients you're going to need to make this savory sweet glorious cookies


Ingredients:

Makes 15 each 2.7 oz cookies


Miso toffee

6 Tbs ( 80g ) unsalted butter

3/4 cup (160g ) light brown sugar

3 Tbs miso paste of your choice

1 Tbs corn syrup

1/4 tsp baking soda


Cookie dough

1 1/4 cup ( 250g ) light brown sugar

1/2 cup ( 116g ) granulated sugar

2 1/4 cup ( 336g ) all purpose flour

1/4 cup ( 37g ) malted barley flour-can sub with AP flour

1/2 tsp ( 1g ) baking powder

1/2 tsp ( 1g ) baking soda

3 Tbs miso paste of your choice

2 sticks ( 8 oz ) unsalted butter

1 Tbs vanilla extract

2 each eggs

8 oz semi sweet chocolate chunks or chips



How to make them:

  1. To make the miso toffee, in a medium sized pot combine brown sugar, corn syrup and butter on medium low heat, stir until the brown sugar is completely dissolved and until the mixture is homogeneous, about 8-10 minutes

  2. Whisk in the miso paste, remove from heat then add in the baking soda stirring immediately.

  3. Pour the hot sugar mixture onto a 1/4 sheet tray lined with a sil pad or parchment paper

  4. Let cool completely then store in freezer and let the sugar harden, about 20 minutes

  5. To make the cookie dough, start by browning the butter. Melt butter in a pot and stir occasionally until it smells toasty and the color is browned. In a large bowl combine both brown sugar and granulated sugar, pour in cooled browned butter and stir

  6. Add in eggs and miso paste, whisk together then add in AP flour, baking soda and baking powder. Mix until there are no visible dry flour

  7. Break the miso toffee in a freezer bag, add to cookie dough along with chocolate chunks, mix till just combine

  8. scope cookie dough onto a sheet tray, let rest in the fridge for at least 30 minutes before baking

I know it is hard to resist the urge of wanting to bake them right away, but resting the dough will help the cookies develop more flavor and prevent them from spreading too much while baking.


This is the chocolate chunks I use, they melt very nicely


Ok time to bake the cookies, preheat your oven to 350F and once it is up to temp, sprinkle some flaky sea salt on the cookie dough and bake them for about 12-14 minutes. Now they might come out looking a little crazy, but don't freak out. Just grab a spatula and push the edges to the center. These cookies do have a ton of toffee pieces in them so it is perfectly normal for them to come out looking like hot lava.
