No Mixer Cinnamon Rolls

Don’t let having no mixer stop you from making cinnamon rolls! The dough is made then rested in the fridge the night before so it’s full of flavor, oh and did I mention you don’t need a mixer so this might just be the easiest cinnamon rolls you can ever make? The only hard part is rolling them out and shaping them but I’m sure you can do it!

My favorite maple extract:
No Mixer Cinnamon Rolls
Yields 12 small cinnamon rolls
Dough:
3/4 cup ( 187g ) milk
1 egg
3 Tbs melted butter
1/4 cup ( 47g ) granulated sugar
1 1/2 tsp ( 4.5g ) kosher salt
1 tsp (3g ) instant yeast
1 3/4 cup ( 245g ) AP flour
1/2 cup ( 70g ) bread flour
Filling:
1/2 cup ( 105g ) brown sugar
1 Tbs ( 7g ) ground cinnamon
4 Tbs soft butter
Cream Cheese Frosting:
8 oz soft cream cheese
2 Tbs soft butter
1 cup ( 120g ) powdered sugar
2 Tbs milk or cream
1 tsp vanilla paste or extract
1 tsp maple extract
To make the dough: the night ( or day ) before you want to make the cinnamon rolls, whisk together the milk, egg, sugar, salt, melted butter and yeast in a bowl then add in both AP and bread flour. Mix until no dry flour is visible. The dough consistency is in between cake batter and a very sticky dough

2. Cover the bowl with a towel and let the dough ferment for 1-2 hours in room temperature, then transfer the dough into a greased rectangle shaped Tupperware, flatten the dough out to fit all corners
3. Place the dough in the fridge and let rest overnight. The next day transfer the dough out onto a floured work surface, since the dough is already in a rectangle shape it would be much easier to roll out to a 16”x11” dough sheet

4. Combine brown sugar and cinnamon in a bowl them evenly spread 4 Tablespoons of butter onto the dough then sprinkle the cinnamon sugar on top, press it down with both your hands so the cinnamon sugar stick better
5. Roll the dough up tightly then cut it into 12 even pieces, I love using a sharp serrated knife but use unflavored dental floss if that’s your vibe 😗
6. Transfer the rolls onto a greased baking dish and let proof in room temperature until almost doubled in size, about 1.5 hours
P.s. during winter time when weather is cold they might take longer


7. While the rolls are proofing make cream cheese frosting: combine cream cheese and butter in a bowl, whisk until smooth then whisk in powdered sugar, both vanilla and maple extract and smooth it out with some milk or cream, set aside
8. Pre heat oven to 350F, cover the baking tray with foil and bake the rolls for 15 minutes, remove the foil and bake for another 12-15 minutes or until golden brown
9. Smear the frosting on the cinnamon rolls when they’re still warm and enjoy!!!!
