Creme Brûlée

This is how you make creme brûlée at home without an oven! It’s so much faster and perfect for summertime. All you need is a steamer pan and you’re good to enjoy a damn good creme brûlée in under 2.5 hours!



Ingredients

Makes 3 servings


3 each egg yolks

1/4 c ( 50g ) granulated sugar

1 c ( 230g ) heavy cream

1 tasp vanilla bean paste or extract


1. In s bowl whisk together yolks and sugar, meanwhile heat the cream with vanilla to light simmer or until bubbles form around the edges of the pot

2. Pour the hot cream into the yolk mixture while whisking

3. Divide the custard into 3 remakins

4. Steam with the lid slightly open ( set a chopstick down before closing the lid ) for 13 minutes. The custard should have a slight wobble to it, if it feels liquidy let it steam a couple minutes more

* the steam will be too harsh with the lid closed completely. Leaving a crack will help prevent the custard from overcooking

5. Chill the creme brulee for at least 2 hours before serving. Sprinkle an even layer of sugar on top and blow torch till the sugar is caramelized
