Tiramisu

Tiramisu no doubt is one of the best Italian desserts, but did you know it is actually not hard to make it at all 🤔 I like mine very boozy but if you’re sober just cut out the alcohol it’ll still be super delicious.
Tiramisu recipe
Serves 8
Filling:
1 whole egg plus 1 egg yolk
1/2 cup/ 107g sugar
1/2 tsp salt
1 package ( 8 oz ) mascarpone cheese
1 tsp vanilla extract or bean paste
Espresso soak:
1/2 cup espresso or string black coffee
2 Tsp sugar
1/4 cup sweet Marsala wine
( or rum, coffee liquor, anything that’s dark and chocolaty will work )

Cocoa powder
- In a bowl combine all ingredients for espresso soak, let cool completely before using 
- In a separate bowl combine egg, egg yolk, sugar and salt, whisk to combine and place it on top of a steaming hot water and whisk until the sugar is dissolved 
- Remove from heat and let the mixture cook down completely 
- Whisk vigorously until the mixture is thick and pale, then add in a whole pack of cold mascarpone cheese and vanilla extract 
- Whisk until creamy and fluffy, about 3-4 minutes 
- Dip each lady finger in the espresso soak for 4-5 seconds then layer them in a dish ( use whatever vessel you want really there’s no rule for what you want your tiramisu in!), cover the soaked lady fingers with half of the mascarpone cream 
- Repeat step 6, smooth out the top with a spatula 
- Refrigerate for at least 6 hours but over night is even better 
- Dust the top with cocoa powder and enjoy!
